Carmencita shows how to prepare an express Iberian pork paella at Madrid Fusión

At the latest edition of Madrid Fusión Alimentos de España, held from 26 to 28 January 2026, we took to the stage at the Comunitat Valenciana stand with one very clear goal: to prove that a high-quality paella can also be quick, simple, and leave zero room for error.

Part of our culinary team, led by Yolanda and Paco, delivered a live showcooking designed for an audience eager to understand the step-by-step process, the reason behind each ingredient, and, above all, how to achieve a perfect result without overcomplicating things. Paco took charge of the heat and the cooking. Yolanda guided the preparation, explaining the qualities of both the product and the process, with the natural confidence of someone who knows that the best proof is what comes out of the pan.

The recipe — an Iberian pork pluma paella — was prepared using one of El Paellero kits, one of our flagship products. The key lies in its concept: everything is carefully measured to ensure it never fails. With dehydrated ingredients that keep perfectly in the pantry, it becomes a practical, versatile solution that is easy to have on hand at all times.

To prepare a straightforward paella in very little time, the message was as clear as it was useful: all you need is the sofrito, a little oil, water, and Carmencita’s Paellero seasoning. Nothing else. The rest of the time is yours — to enjoy and switch off while the rice does its job.

During the session, Yolanda and Paco also shared one of the core ideas that guides our work: before any product reaches the end consumer, we control every single step. In our new facilities, we have a large laboratory divided into three areas — one focused on food safety, another on chemical analysis, and a third dedicated to R&D and test cooking, where we ensure that every blend performs exactly as it should.

“This is where the magic happens,” Yolanda told the audience, referring to the controls and testing that guarantee a consistent, recognisable flavour anywhere.

This work includes sensory analysis to ensure consistency, rigorous allergen control, and an absolute priority on safety, alongside a constant focus on keeping our blends aligned with consumer expectations and market trends.
