Cutting-edge training: Carmencita promotes culinary excellence at GASMA

On 17 and 18 February 2024, Carmencita’s R&D and Gastronomic Application team demonstrated their commitment to gastronomic innovation by leading a training session for the Gastronomy Degree students at GASMA, the prestigious University of Gastronomy, Management, and Food in Castellón. This program trains future leaders in cooking by combining technique, creativity, and business vision, fundamental pillars for the food industry.

On this occasion, our colleagues taught for two intensive days, sharing advanced knowledge in sensory analysis, applied research, and new product development. The experience included practical workshops, tastings, and sensory evaluations, as well as the design of innovative culinary concepts, with the aim of enriching the students’ training.

These sessions offered a practical immersion in the use of pure spices and the role of sensory analysis in the development of innovative products like Shaker fries, the Oven baked line, and Spice coffee.

The sensory tests were especially noteworthy, captivating students from different parts of the world, as they experienced how techniques like roasting, infusion, and maceration transform the nuances, aromas, and flavours of spices, expanding their possibilities in cooking. The students were able to evaluate the appearance, smell, texture, and taste of the spices, highlighting the importance of these factors in the gastronomic experience.

This collaboration with GASMA is not new. Since 2022, our professionals have participated every year, strengthening the relationship between the two entities. These activities reflect the passion and commitment of the participants, who, in addition to learning about the theory and practice of sensory analysis, expanded their knowledge of the richness and diversity of spices and their application in culinary innovation.
