The IV Carmencita Conference on Gastronomic Flavour Studies will take place on 18 October.
They will address the gastronomic challenges of the post-Covid era, with the aim of reflecting on the role that gastronomic knowledge should play, both in the training of future professionals and in its transfer and applied research, keeping in mind the sector’s commitment to agendas such as the Sustainable Development Goals (SDGs).
On this occasion, the director of the Basque Culinary Center and the director of the Alicia Foundation (food and science) will be present, as well as the archaeologist and director of the Alcudia Foundation and chefs María José San Román and Patricia Sanz.
The Carmencita Programme in Gastronomic Flavour Studies has as its main objective the development of research, dissemination, and training activities in the field of gastronomy, particularly focusing on the relationships with the universe of flavour and the culinary richness encompassed by Mediterranean food culture.
