Last weekend, part of the R&D team from Carmencita, Pablo Jurado and Alejandra Martínez, travelled to Donostia to participate as judges in the Hackathon organised by the Seasoned Project at the Basque Culinary Center.
A total of 27 young researchers from various countries participated in the competition: Poland, Spain, Portugal, USA, and Ecuador. “The Flavours of the World: New Trends”. This was the theme on which the working groups of 2-3 researchers had to work.
The winning group, Jorge Sáez from the Miguel Hernández University, and Getulio Ribeiro from the Basque Culinary Center, received a cheque for €3,000 from Carmencita to continue advancing in their studies and research.
Their project was based on a study of the most widely consumed products in the target market, the identification of their main aromas, and the creation of aromatic blends based on spices that would evoke positive emotions in consumers.
Pablo and Alejandra tell us: “It has been a very positive experience for the R&D Department of Carmencita because, in addition to showcasing our work and positioning the company in the innovation sector, it has allowed us to learn about new trends in data analysis for product development, with the best Sensory Analysis researchers in the world.”
