Carmencita and MOM Culinary Institute: An alliance for the gastronomy of the future.

In a world in which cooking is an art and sustainability a compromise, Carmencita and MOM Culinary Institute join forces to shape a new generation of chefs with awareness and passion for the culinary excellence.

During to days of formation, the 9th and 10th of April, our R&D and cooking experts shared their knowledge and experience in the iconic MOM building on Madrid’s Serrano Street, and the recently opened MOM Pardo space. This last one, which used to be a century XIX convent and was transformed into an innovative educational institution, symbolises the evolution of gastronomy in harmony with history and sustainability.

The compromise with comprehensive training is reflected in the variety of programmes offered by MOM Culinary Institute, from official formative cycles to university qualifications of graduate and postgraduate degrees. Under the direction of Laura Morcillo, this new center not only brings practical knowledge, but also a deep respect for the land and its rewards, as it is demonstrated by its impressive urban vegetable garden and the extensive terrain of one hectare in Madrid’s outskirts.

During these formative days, Alejandra Martínez, Aarón Carbonell and Paco López, members of Carmencita’s team, accompanied by Sergio Pita, area manager in Madrid, explored the infinte possibilities are offered by spices in modern cuisine and have shared the importance of compromise with quality and sustainability, to the students at the school.
The convent’s garden, MOM Culinary Institute’s crown jewel, represents its rootedness to the land and its compromise with sustainable agriculture. What is more, this space will be the temporary site of Madrid Culinary Campus, an initiative which seeks to boosts the culinary excellence of the capital.
