Ingredients

For the koftas

  • 400 g minced beef
  • 2 tablespoons shawarma seasoning
  • 1/4 red onion
  • Olive oil

For the sauce

  • 125 g Greek yoghurt
  • 1 tablespoon tahini
  • 1 lemon
  • Salt

Preparation

  1. Toast the shawarma seasoning in a small frying pan over low heat without any oil. Once the spices start releasing their aroma, transfer them to a mortar and grind them very finely.
  2. Mix the seasoning with the minced beef and the finely chopped red onion. Shape each kofta around a metal skewer, forming slightly cylindrical shapes.

4. Cook on a grill or griddle with a drizzle of olive oil until golden on all sides.
5. For the sauce, mix the yoghurt, tahini, lemon juice and a pinch of salt in a bowl.
6. Slice the cucumber, cut the tomato into wedges and finely slice the red onion into thin strips. Combine the vegetables in a bowl with a drizzle of olive oil and the juice of half a lemon.
7. Serve the salad alongside warm pitta bread, the freshly cooked koftas and the sauce.
