4 potatoes
Extra virgin olive oil
Carmencita Salt & truffle
3 eggs
Iberian Ham

Preparation

  1. Peel the potatoes and cut them into sticks.
  2. Fry the potatoes over medium heat in extra virgin olive oil.
  3. Remove the potatoes and let them rest so that the heat reaches inside the potato.
  4. Fry the potatoes again, this time over high heat.
  5. Drain the oil well.
  1. Season the potatoes with the Salt & Carmencita truffle grinder.
  2. Use the same oil as the potatoes to fry the 3 eggs.
  3. Plate the potatoes, eggs and Iberian ham.
  4. Season with the Salt & Carmencita truffle grinder to give the final touch to the dish.
