Preparation

  1. Roast the aubergines with a drizzle of olive oil until they are very tender and the skin separates easily from the flesh.
  2. Once slightly cooled, scoop out the flesh and mix it with the finely chopped shallot and garlic, the toasted sesame seeds, the crumbled feta cheese and the vegetable seasoning.

3. Shape the mixture into small meatballs and coat them lightly in breadcrumbs. Cook again until the outside becomes golden and crisp.
4. To serve, accompany with a light tahini sauce and finish with pomegranate seeds and freshly chopped mint, which add freshness and contrast to the dish.
