Our beet gazpacho is one of those versions. So tasty that few can resist it.

At Carmencita, we wanted to give it our special touch with cumin and tarragon.

1/2 green pepper

1/2 spring onion

2 tomatoes

1 garlic

2 beets

1 glass oil

1 tablespoon vinegar

1/2 tablespoon Carmencita Ground cumin seed

1/2 tablespoon Carmencita Tarragon

2 tablespoons of sugar

Carmencita Mediterranean sea salt

Chive

Plain yogurt

Preparation

  1. Cut the pepper, the spring onion, the tomatoes and peel some garlic.
  2. Add the vegetables and whole beets into a stand mixer.
  3. Season with extra olive oil, vinegar, Carmencita ground cumin, Carmencita tarragon and Carmencita Mediterranean sea salt.
  4. Correct the acidity with sugar.
  5. >Crush at maximum power.
  6. Strain
  7. Garnish with chives and natural yogurt.
