Saffron artichokes

Artichokes are very healthy, delicious and are irresistible when well cooked. A sauté of ham and sliced garlic with a little bit of ground saffron makes these artichokes into an exquisite dish.

10 artichokes
Lemon
Extra virgin olive oil
100 g of Iberian ham
1 tablespoon Carmencita sliced Garlic
25 g of flour
1 liter of water
2 sachets Carmencita Saffron powder
1/2 tablespoon Carmencita Parsley

Preparation

  1. Cut the artichokes into quarters and submerge in water with lemon.
  2. Sauté the ham with a tablespoon of sliced garlic and the flour.
  3. Add the artichokes, a litre of water and the 2 sachets of saffron.
  4. Cook for 15 minutes until the artichokes are tender.
  1. For the yoghurt sauce, mix the yoghurt with the smoked sweet paprika.
  2. Garnish with pomegranate and cilantro leaves.
