250 ml sunflower oil
2 eggs
10 drops lemon
1 teaspoon Salt & truffle
1 glass cold water
150 g of flour
Carmencita Spicy Salt
2 soft shell crabs
1 muffin
Sriracha sauce (Asian hot sauce)
Pickled onion

Preparation

  1. In a mixing glass, emulsify an egg, sunflower oil, drops of lemon and the Salt & Carmencita truffle until obtaining a mayonnaise.
  2. Mix, in a bowl, flour, cold water and an egg.
  3. Add spicy salt and mix.
  4. Coat the soft shell crabs in batter and fry them.
  5. Cut the muffin down the center.
  6. Spread the truffled mayonnaise.
  7. Serve the fried crab, sriracha sauce and pickled onion with some sprouts on top.
