Ingredients

400 g flour of strength 00
12 g Carmencita Mediterranean sea salt
250 ml lukewarm water
10 g fresh yeast
Extra virgin olive oil
100 g tomato sauce
1 envelope Carmencita ground Garlic bio
20 g rocket
1 burrata
1 envelope Carmencita Oregano bio

Preparation

  1. Mix the flour and salt. Separately, mix the yeast and water.
  2. Add the liquids to the solids and mix until a homogeneous mass is formed.
  3. Slowly knead stretching the dough.
  4. Add a drizzle of olive oil and roll the dough until its surface is completely smooth.
  5. Ferment the dough for 1 hour in a bowl with oil on the base and covered with a clean kitchen towel.
  6. Cut the dough into two portions and knead again with olive oil in your hands.
  7. Make a ball of dough, cover with the cloth and rest for 3 hours.
  8. Stretch the dough either with the help of a rolling pin or with your hands.
  9. Add the tomato sauce and pocket bio garlic over the sauce.
  10. Bake for 25 minutes at 200 ⁰ C.
  11. Finish with a burrata on top, arugula, olive oil and organic pocket oregano.
