50 g butter
2 garlic
1 onion
1/2 red bell pepper
1/2 yellow bell pepper
1/2 green pepper
4 plum tomatoes (peeled and seedless)
1 teaspoon salt
1 teaspoon sugar
Carmencita Parsley bio
1 eggplant
1 zucchini
2 tomatoes
15 ml sherry vinegar
30 ml extra virgin olive oil
Carmencita Sea salt & herbs
Carmencita Ground black pepper bio
Carmencita Ground garlic bio

Preparation

  1. Finely chop the garlic, onion and peppers.
  2. Blanch, peel and remove the seeds from the plum tomatoes and cut very thin.
  3. Melt the butter over low heat and sauté all the vegetables for 30 minutes.
  4. Add the sugar, salt and bio pocket parsley.
  5. Make a base with the sauce.
  6. Cut the tomatoes, aubergine and zucchini into very thin slices.
  7. Assemble in an oval dish positioning the vegetables in a spiral shape.
  8. Heat the oven to 180 ⁰ C and bake with baking paper on top for 45 minutes.
  9. Finish with the vinaigrette and bake for 10 more minutes.
