50 g flour of force 00
50 ml lukewarm water
5 g fresh yeast
200 g wholemeal flour
90 g flour of force 00
210 ml of water
1 tablespoon Carmencita ground Garlic
10 g Carmencita ground Turmeric
25 g fresh yeast
5 g Carmencita mediterranean sea Salt
150 g walnuts

Preparation

  1. Mix 50 g of strong flour, 50 ml of lukewarm water and 5 g of yeast and ferment for 1 day.
  2. In a mixer, add 200 g whole wheat flour, 90 g 00 strength flour, 210 ml water, 25 g yeast, ground garlic, sea salt and turmeric.
  3. Add the preferment and knead for 5 minutes.
  4. Make a ball and ferment for 2 hours.
  5. When the dough has risen, add the nuts and knead again, round and ferment for 2 hours.
  6. Cut the bread and bake for 45 minutes at 220⁰C.
