1 eggplant
Extra virgin olive oil
Lemon
1 tablespoon Greek yogurt
1 tablespoon tahini
1 teaspoon Carmencita ground cumin seed
1 tablespoon Carmencita ground garlic
Carmencita Smoked Mediterranean salt grinder
Carmencita Allspice grinder
Carmencita hot Paprika

Preparation

  1. Roast the aubergine with extra virgin olive oil, at 200⁰ C for 30 minutes.
  2. Let the aubergine cool, chop finely and mix with lemon juice, Greek yogurt, tahini and extra virgin olive oil.
  3. Add ground cumin, ground garlic, smoked Mediterranean salt, and allspice.
  4. Mix and decorate with hot paprika and extra virgin olive oil.
