Ingredients

1 kg of beef sirloin
1 red onion
200 g mozzarella
200 g mushrooms
2 tablespoons extra virgin olive oil
50 g spinach
1 teaspoon Carmencita sliced Garlic
Carmencita Grinder Barbecue seasoning

Preparation

  1. Heat olive oil in a frying pan and sauté the onion and mushrooms.
  2. Add the sliced garlic and spinach, sauté briefly.
  3. Cut the sirloin spreading the meat out like a little book and pound the meat, leaving it soft.
  4. Season the meat with the barbecue seasoning.
  5. Add the mozzarella cheese on top and spread the sautéed vegetables over the meat.

6. Make a little roll and tie up with butcher’s twine at several points, leaving a finger-width’s space between.
7. Cut into medallions and stick a toothpick in each one.
8. Cook the beef lollipops on the grill.
