2 carrots
50 g of butter
2 tablespoons of honey
2 tablespoons of soy sauce
1 tablespoon of rice vinegar
2 tablespoons of water
1/2 teaspoon of Carmencita white pepper whole
1/2 teaspoon of Carmencita rosemary
1/2 teaspoon of Carmencita thyme
1/2 teaspoon of Carmencita garlic ground
Carmencita salt and truffle grinder

Preparation

  1. Peel the carrots and laminate them with a mandoline.
  2. Roll the carrot sheets to form a medallion and tie them with a kitchen twine.
  3. Add the butter to a frying pan, cook the carrot medallions and add the honey, the soy sauce, the rice vinegar and the water.
  4. Season with the spices and reduce the sauce while cooking the carrots.

TIP: Combine the spices, rosemary, thyme, garlic, white pepper…with an Asian dressing to give it an umami delicious taste.
