Quiche of confitted tomatoes

Imagine the sweetness of tomato confit. The creaminess of the cream and goat cheese. The country aroma of thyme, oregano and rosemary. The salty flavour of the Mediterranean.

Carmencita has been inspired by this salty French tart and has reinterpreted it to add the warmth of spices and the liveliness of a red that makes it more appetising.

1 broken dough

9 cherry tomatoes

Extra virgin olive oil

3 eggs

1 glass cream

100 g goat cheese

1/4 teaspoon Carmencita Rosemary

1/4 teaspoon Carmencita Thyme

1/4 teaspoon Carmencita Oregano

Carmencita Mediterranean sea salt

Preparation

  1. Cover the entire mold with the broken dough and make some holes in the base so that it does not swell.
  2. Bake the dough at 180 ⁰ C for 15 min.
  3. Simmer the cherry tomatoes in plenty of olive oil.
  4. In a bowl, mix the 3 eggs, the cream, the crumbled goat cheese and the herbs.
  5. Season and pour the cream into the previously baked dough, along with the cherry blossoms.
  6. Bake the quiche at 180 ⁰ C for 20 min.
