3 loquats
1 tomato
2 shallots
1 tablespoon sherry vinegar
3 tablespoons of extra virgin olive oil
1/2 teaspoon Carmencita ground Fennel
50 g rocket
1 mozzarella
Carmencita lavender Salad

Preparation

  1. Cut the loquats and the tomato into small pieces, and the shallots very finely.
  2. Mix with the sherry vinegar and olive oil, fennel, shallot, and emulsify.
  3. Add lettuce rocket, tomato, medlars and a sliced mozzarella in a bowl.
  4. Dress with the shallot and fennel vinaigrette.
