Tex-Mex chicken

Because these wings have a secret: they have been marinated with olive oil, brandy and Carmencita’s foodie Tex-Mex grinder. A grinder with a mixture of very special salts and spices that gives the wings:

  • the intense flavours of recently ground coriander, cumin and black pepper.
  • The attractive green and red colouring of the peppers and the different textures of their small leaves, seeds, and grains and crystals of sea salt.

Ingredients

1 glass extra virgin olive oil

1 tablespoon cognac

1 teaspoon Carmencita Spicy seasoning

8 chicken wings

2 potatoes

1/2 teaspoon Carmencita Hot & smoked paprika

1/2 teaspoon Carmencita Garlic salt

25 ml cognac

Preparation

  1. Mix the oil, cognac and Carmencita Spicy seasoning in a bowl.
  2. Marinate the chicken wings in the previous mixture for 2 hours.
  3. Cut the potatoes into sticks and fry until crisp.
  4. Season with hot paprika and Carmencita garlic salt.
  5. Grill the chicken wings and finish by flambéing them with cognac.
