3 oranges

Lime juice

2 tablespoons Carmencita Garlic powder

2 tablespoons of Carmencita Peppermint

2 tablespoons of Carmencita Coriander leaves

1 tablespoon Carmencita ground Cumin

1 tablespoon of Carmencita Oregano

150 ml of extra virgin olive oil

1 kg of pork loin head

Carmencita Pink salt & 3 peppers

Cooked ham

Mustard

Cheese

Pickles

Crystal bread

Preparation

1. Mix the orange juice, orange zest and lime juice in a glass.
2. Add the powdered garlic, peppermint, coriander, ground cumin, oregano and olive oil and blend until emulsified.
3. Season the pork fore-loin with the grinder, marinate in the liquid with the spices and juice for 12 hours.
4. Bake for 40 minutes at 200⁰C, and set aside until it has cooled.

5. Once cooled cut the pork into very thin slices and sear on the grill with the cooked ham.
6. Spread mustard on the bread and assemble the sandwich with the meat, ham, cheese, pickles and toast in a sandwich press with butter.
