30 g of parmesan cheese
40 g of rocket
30 g of Carmencita pinenuts
1 tablespoon of Carmencita basil
1 tablespoon of Carmencita Garlic Ground
Carmencita ink salt and 3 peppercorns grinder
80 ml of extra virgin olive oil
2 eggs
60 g of dried tomatoes
4 tablespoons of water
1 Bagel bread

Preparation

  1. Scald the rocket and cool tot to keep the green color.
  2. Crush the scalded and cooled rocket with the parmesan cheese, the pinenuts, the basil, the garlic ground, the olive oil and scalded rocket water.
  3. Toast the Bagels on a frying pan with a bit of olive oil, set them aside and fry the eggs.
  4. Assemble the bagel with the pesto sauce, the egg, some rocket leaves and the dry tomato.
