Skirt steak with chimichurri sauce

Prepare the authentic Chimichurri sauce to accompany this skirt steak with squash.

You just have to mix our special Chimichurri seasoning with olive oil, a little sherry vinegar and the ideal point of Mediterranean sea salt.

1 pumpkin
1/4 teaspoon Carmencita Rosemary
1/4 teaspoon Carmencita Basil
Carmencita Mediterranean sea salt
6 tablespoons extra virgin olive oil
1 tablespoon Carmencita Chimichurri seasoning
1 veal entrail

Preparation

  1. >Cut the squash into quarters and cover with aluminum foil.
  2. Bake for 1 hour at 200 ⁰C until tender.
  3. To make the chimichurri sauce, mix the oil, vinegar, salt, and chimichurri seasoning and let sit for 5 minutes.
  4. Grill the entrails until they are toasted on the outside and tender on the inside.
  5. Remove the pumpkin, break it up and season with salt, herbs and olive oil.
  6. Chop the meat and sauce with the chimichurri.
