Ingredients

2 sweet potatoes
Extra virgin olive oil
1 onion
1 apple
1 tablespoon of chopped Carmencita garlic
1 tablespoon of Ras el Hanout Carmencita
Giant grinder Carmencita sea salt
Ground black pepper Carmencita
2 tablespoons of honey
Greek yogurt
1 teaspoon of smoked sweet paprika Carmencita
Grenade
Coriander leaves Carmencita

Preparation

  1. Clean the sweet potatoes, cut in half and then make cross cuts in them.
  2. Place them on a baking sheet, season with olive oil and bake 45 minutes at 200 ⁰C.
  3. Poach an onion and an apple on low heat until they are tender and season with minced garlic, ras el hanout, sea salt and ground black pepper.
  4. Add two tablespoons of honey and sweet potato pulp to the sauté, cook for 10 minutes and fill the sweet potatoes.
  1. For the yoghurt sauce, mix the yoghurt with the smoked sweet paprika.
  2. Garnish with pomegranate and cilantro leaves.
