Canary Island-style potatoes with hot mojo sauce are one of our favourite appetisers, with a light coating of salt, the powerful hot pepper sauce, the spicy flavour of cumin and the delicious taste of paprika.

Potatoes

8 garlic cloves

20 ml of white wine vinegar

150 ml of extra virgin olive oil

1 tablespoon Carmencita Cumin

3 Cayenne chili peppers

1 tablespoon Carmencita sweet Paprika

Carmencita pink salt and 3 peppers

1 liter of water

300 g of salt

Carmencita Parsley

Preparation

1. Blend the garlic, oil and vinegar with the spices and a little water.
2. Boil the water with salt until it dissolves and add the potatoes until they have softened.
3. Once soft, strain off the water and cook for 5 minutes more until the salt comes out of the potatoes.
4. Add the sauce and parsley.
